Even the late Queen Elizabeth II was partial to a pancake or two on Shrove Tuesday, and she even had her own secret recipe to perfect them.

The late Queen Elizabeth II is known to have enjoyed a sweet treat, with Shrove Tuesday the perfect day to indulge in a pancake or two.

As a devoted Christian, the late Queen participated in Lent - although she often took advantage of Shrove Tuesday. Queen Elizabeth is said to have enjoyed a range of both sweet and savoury pancakes, with Royal Family chefs having previously revealed exactly how they made them fit for a Queen.

As well as enjoying a simple dash of fresh lemon and caster sugar, the late monarch also liked one unconventional ingredient mixed in.

Ingredients for 10 simple pancakes

  • 30g egg yolks
  • 250ml milk
  • 40g butter
  • 30g sugar
  • Pinch of salt
  • 2 medium eggs
  • 125g Plain Flour

Mix together all of the dry ingredients: flour, bicarbonate of soda, cream of tartar and sugar. Add to this the milk and egg and whisk to a smooth batter. Lastly, add the warm melted butter.

The batter should have a dropping consistency, but remain thick enough to retain its shape into pancake shapes.

Heat the pan over a medium heat and grease with butter. Carefully pour spoonfuls of the batter into the pan. After one side has cooked, flip to cook the other side. Serve warm with butter and home-made preserves.

The perfect beurre noisette

According to the royal chefs, pop the butter into a pan to gently create a nutty butter. Cook off all the water and you should be left with the solid part of the butter. Once the noise has stopped, it will be a 'nutty brown colour'. Leave it to cool before adding to your pancakes.

A savoury pancake option

For the late Queen's savoury pancake, the chefs recommend adding fresh herbs - such as chives - to the batter before cooking.

The ingredients include:

  • 125g grated Gruyere cheese
  • 275ml full-fat milk
  • 200g ham (diced and cooked)
  • 150g leeks (cooked and sweated down)
  • 40g butter
  • 40g Plain Flour

The chefs first recommend making the cheese sauce - with two pans. In the first, heat the milk gently, and in the second melt your butter, and whisk in your flour.

Add the heated milk into the butter and flour and mix really gradually. Make sure to constantly whisk it so it doesn't get lumpy.

Set this one-quarter of this mixture aside. Add most of your cheese to the bulk of the mixture, keeping some back for toppings, as well as your cooked ham and leeks. You can also season at this stage with salt and pepper. The royal chefs advise that you can "add cayenne for a kick if preferred".

According to the chefs, you can "divide the mix into the pancakes and then roll into cigars" before putting them in a greased oven-proof dish. Pour over the remainder of the sauce, and your leftover grated cheese and bake for 15-20 mins at 180 degrees celsius, or until they are golden brown.
