Breakfast time in the mornings is getting a little tired. We have to wake up pretty early to catch the bus at 6:50 am so I’ve been trying to find recipes I can make ahead for breakfast. I have been cooking sausages the night before, making Instant Pot hard boiled eggs for the week, baking breakfast cookies on Sunday, and the kids have been enjoying these oatmeal bites we make in our pressure cooker.

We baked these with mixed berries but thegreat thing about these is that you can modify the fruit to anything that your kids might enjoy we have used raisins and even chocolate chips!

To make them we used our egg bites silicone mold in our pressure cooker. We have used this mold for many great recipes including these animal cookie cheesecake bites!

We used brown rice flour for these, but you could also use whole wheat flour if that is what you have on hand. All-purpose flour should also work if that is what you have in your pantry.

Breakfast has never been easier than these kid-friendly Instant Pot Oatmeal Bites. They are the perfect addition to your mornings. We love to meal-prep them ahead of time on Sunday morning for the entire week.

Ingredients

  • 1 cup quick cooking oats
  • 1/2 cup brown rice flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 4 eggs
  • 1/3 cup honey
  • 1 tablespoon brown sugar
  • 1 cup mixed berries if frozen, thawed and smashed a bit

Instructions

  • Mix oatmeal, flour, baking powder, cinnamon and salt in a small bow. Set aside.

  • In a larger mixing bowl, add eggs, honey and brown sugar and mix well. Add dry ingredients and mix well. Fold in berries.

  • Grease molds with nonstick cooking spray and use a 3 tablespoon portion scoop to fill each cup.

  • Place 1 cup water and trivet into instant pot. Fold a long piece of foil in thirds. Set one mold onto the foil in the center and bring up the loose foil sides. Lift the foil and set 1 mold onto the trivet in the pot and place a small piece of foil, greased with cooking spray, on top of the mold. Place the 2nd mold into the instant pot. Tuck in the loose ends of the foil so they do not extend over the top.

  • Place the lid on the pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 10 minutes. When cooking cycle is complete, let pressure naturally release for 10 minutes before opening pot.

  • Serve dusted with powdered sugar.

      I have used whole wheat and it was just fine. I haven’t tried all-purpose white but I don’t see why you couldn’t use that. 🙂

    The video shows five eggs and the recipe calls for four eggs. Which is correct? I made this with four and didn’t have 3 tablespoons of fill for all 14 cups in the egg bite mold.

      I use 4 eggs and I am able to fill all 14 molds. How far did you fill the molds?

    Hello, I’m confused by the serving size. This should make 14 bites but the servings say 12. What is the serving size for one meal? Can’t wait to make!

      You are correct, I will fix that. The servings should say 14. For kids 1 bite is plenty.

    Amazing!
    Substitute I used was almond flour and old fashioned oats ( not quick cooking )
    Doubled the batch and made half blueberry and half dark chocolate chunk. So good!

    I feel a bit dense here… I’m not understanding the instructions for the foil. Can you share a photo or explain differently please?

    My silicon moulds came with a silicon lid, can that be used instead?

      Don’t feel dense. I don’t use the silicon lid as it is supposed to be used for storage only and I don’t believe it is pressure cooker safe. I just place a sheet of foil over the top so that not too much moisture gets into the mold.

        I have used the silicone lid in my IP for pancake bites and banana bread bites without a problem. I ordered 2 molds from amazon and received one plastic lid and one silicone. The plastic lid definitely can’t go in the pot but the silicone lid works, after all the molds themselves are silicone.

    Made these last night they are delicious and easy to make. I substituted almond flour for the brown rice flour and added a teaspoon of vanilla. Divided the recipe in two and added bananas and toasted walnuts to half the batch and berries to the other. They came out delicious! Thanks for sharing.

    Hi these sound great.. I don’t have molds so can I just cook them in a reg oven with the mini muffin pan? How long and what temp?

      Yes you could. I would try 350 degrees for 13-15 minutes.

    My husband and I are fans (we went through 12 oatmeal bites in two days and we’re skinny people) — however, based on our affinity for these yummies, and our desire to stay fit, I checked the calorie count you listed in kcals — that would translate to an immense number of cals –so my math must be wrong.
    WHAT’S THE CALORIE COUNT IN ORDINARY CALORIES of one muffin?

      A kcal is one food calorie. There is no difference between a kcal (used in places where the metric system is in use) and one “American” food Calorie. Trust me, I teach science and go over this every year! 🙂
